MAKEOVER: German Potato Dumplings

5 medium sized potatoes1 egg4 eggwhites1 tsp. salt3 cups sifted flour (2 c. unsifted) (2 split 1 cup whole wheat flour and 1 box dumpling mix)1.5 slices toasted bread
Boil potatos chopped, until they are tender. Rice or grate into large mixing bowl. Add eggs and salt. Add flour and Dumpling mix slowly. If it's too sticky, add a tiny bit more flour. Don't add too much or the dumplings will be doughy.
Toast bread and cut into medium pieces (crouton size).
Roll dough around 2 pieces of toast per dumpling. Dumplings ahould be a little larger than a golf ball. Bring large pot of water to boil. Add dumplings and cook 10 minutes, or until they rise to the top of the water and float.
Makes 16 dumplings. One dumpling is one serving.
