Asian Mushroom, Leek & Kale Soup

2 Leeks, sliced into wide strips2T butter, unsalted2 cloves of garlic, chopped1/4C low-sodium soy sauce8C vegetable broth1 head of fresh kale, chopped into large pieces1 oz. of dried oyster mushrooms1 oz. of dried lobster mushrooms8 oz. of fresh bean sproutsSalt, to tasteBlack pepper, to taste2t Asian five-spiceOptional: fresh cilantro to garnish
Melt butter in a large sauce pot over medium heat. Add garlic and leeks and cook until they become tender (about 7 minutes). Add soy sauce, and briefly stir. Add vegetable broth, dried mushrooms and kale. Bring to a boil, then reduce and simmer for 30 minutes. Add bean sprouts, simmer for 2 more minutes, and then remove from heat. If desired, top with fresh cilantro.
