6 T. Fresh or bottled lemon juice3 t. Chopped fresh or 1 t dried oregano4 t Extra Virgin Olive Oil1 t Salt8 garlic cloves, minced1 pound boneless, skinless chicken breast, cut into 1 inch piecesCooking spray
Combine all ingredients, except cooking spray, in a zip-top plastic bag; seal and shake. Marinate in the refrigerator for 30 minutes, shaking the bag once during that time. Remove chicken from bag and discard marinade. Thread onto skewers and cook in a grill pan (sprayed with Pam), for about 8 minutes each side.
