1.5 lbs. thin-sliced chicken breast2 eggs1/2 cup flour1 tsp. salt1 cup panko or regular bread crumbsoreganobasilgarlic powder1/4 cup olive oil4 ounces shredded mozzarella or Italian cheese
Pre-heat oven to 250 degrees. Beat eggs in bowl. Mix flour and salt in separate bowl. Mix bread crumbs, oregano, basil and garlic powder in a third bowl. Heat a little olive oil in 12" skillet. Dip chicken breast pieces, one at a time, in flour, then egg wash, then bread crumbs. Place in skillet with olive oil and cook until brown on both sides. Place cooked chicken breasts in a pan in the oven. When all chicken is cooked, sprinkle with shredded cheese and broil in oven until cheese is melted.
