Brown Rice and Tofu Stir Fry

Ingredients
*Brown Rice, medium grain, 2 cup Olive Oil, Extra Virgin, 3 tbs Broccoli, fresh, 1 cup, chopped Onions, raw, .5 cup, chopped Garlic, 2 clove choppedTofu, 8oz cubedKalamata, Green Olives, pitted, 1 oz choppedJalapeno Peppers, 1 pepper choppedMushrooms, fresh, 1 cup, pieces or slices
Directions
Cook rice, set aside. Heat oil in deep pan/wok, add garlic and onion. Cook a few minutes, add tofu. Then add all remaining ingredients except rice. Once veges are cooked, add rice. May use salt if desired.
