Chicken and Yellow Rice Casserole

Ingredients
1-1.5 lbs chicken breasts, boneless, skinlessBroccoli2 cups leftover yellow riceCream of Mushroom condensed soup, 1 canRitz crackers, crushed for topping
Directions
Cut chicken into bit sized pieces. Saute with onions, garlic, salt and pepper to taste. Cook until golden brown then add mushroom soup and cook until just creamy.
In small (8" square) casserole dish, add rice then al dente broccoli, cover with the chicken & soup. Top with crushed Ritz crackers. Bake in 350F oven for 30 minutes. Serve hot. Enjoy.
