2 cups dry lentils, picked over and rinsed3 medium carrots, peeled and cut into large chunks3 large celery stalks, cut into large pieces2 large onions, cut into large pieces2 medium garlic cloves, minced3 bay leaves1/2 tsp dried thyme1/2 tsp salt1/4 tsp black pepper8 cups beef broth 3 slices Canadian style bacon, diced
Place all ingredients in a large pot. Pick over dry lentils and rinse. Add to pot. Simmer until lentils are cooked Approximately 1 to 2 hours. Remove bay leaves and serve.
Serving Size: Yields about 1 1/2 cup per serving
