6 cups Pork shoulders Roast shredded or diced1.5 cups shredded cheddar cheese2tsp garlic or more if needed --taste preference1Tbsp Salt1/4 cup finely chopped onion12 Corn Tortillas4 Cups oil (for Frying)
Place cooked pork and onion in large skillet on Med heat, add garlic and salt to taste. cook for about 15 min, add water as need to keep the pork from burning.
Assemble the taquitas: Place a small amount of cheese down the middle of the tortilla. Place some of the pork mixture on top of the cheese, roll the tortilla and secure with a tooth pick, place in hot oil and fry for 3-4 mins till crispy.
Serving Size: Makes 12 Taquitas
