No-Noodle Lasagna

Ingredients
Zucchini, summer squashRicotta cheeseMozzarella cheeseMeat sauce (ground sirloin, carrots, celery, onion, garlic; Prego Heart Smart Light sauce)Mushrooms
Directions
Slice zucchini and summer squash into thin strips. Sprinkle salt over top and allow to drain in a collander.

Mix together ricotta and mozzarella cheeses.

In a large skillet, combine sirloin, onions, garlic, carrots, and celery until cooked through. Add pasta sauce and heat through.

In a greased 9x13 in pan, put a layer of meat sauce, then zucchini "noodles", then cheeses, then mushrooms. Repeat.

Bake at 325*F for 45 minutes, covered in foil. Remove foil, increase temperature to 350*F and remove foil. Cook for 15 more minutes.

Allow to cool for 5 minutes before serving.
