Ultimate Cheese on Toast

Ingredients
1 red onion peeled and sliced40g Butter, unsalted,225 g Cheddar Cheese, grated1 tsp Wholegrain Mustard,4 slices wholemeal bread, lightly toasted
Directions
1) In a pan, cook the onion in half the butter for 5 mins. Add the cheese, remaining butter and mustard and heat gently, stirring until the cheese has melted and the mixture is smooth. Season with black pepper and a little salt. Use to top the toast and grill until bubbling.
