Balsamic Chicken and Vegetables

Ingredients
1 cup, chopped Onions, raw 1 cup, chopped Carrots, raw1.5 cups, slices Mushrooms, fresh1 pound of Boneless, skinless chicken breast 2 tbsp Olive Oil2 tsp of McCormick GrillMates Montreal Steak Seasoning2 tbsp balsamic vinegar
Directions
1. Place onions, carrots and mushrooms in mircowave bowl and microwave on high for 5 minutes or until hot.

2. While vegetables are cooking cut chicken into 1 1/2 strips.

3. Coat pan with oilve oil. Add chicken and sprinkle with 1 tsp of steak seasoning. Cover and cook for 2-3 mintues turning halfway through.

4. Drain vegetables and stir the vegetables into the chicken. Cover and let cook for about 5 minutes, turning atleast once.

5. Remove cover and cook for 3 minutes more, stirring if needed.

6. Stir in balsamic vinegar and sprinkle with remaining steak seasoning.

    Excellent, although I made 2 minor changes, I used Prudhomme's Meat Magic instead of the steak seasoning, and I sauteed a bag of frozen veggies with the chicken. - 1/18/09
