6 egg whitespinch of salt1/4 tsp cream of tartar1 tsp vanilla1 c sugar
Preheat oven to 225. Line baking sheets with aluminum foil.
Beat egg whites until foamy. Add salt, cream of tartar and vanilla and continue beating. Add sugar 1 tsp at a time, beating about 1 minute between additions. When all the sugar has been added, beat 5-8 mins more. Batter will be stiff, glossy and smooth.
Pipe onto pans.
Reduce temperature to 200 and bake 1 1/2-2 hrs, until dry. Cool completely, store in cool dry place. (I left them in the oven overnight to get really dry).
