Blueberry Corn Salad

Ingredients
2 cans corn (drained)1 pint blueberries1 bunch cilantro (chopped)1 jalapeno (chopped and seeded)1 hot house cucumber (coarsely chopped)1 red onion (diced)1 T honeyjuice of 2 limes (can use more)1 T olive oil
Directions
Chop up all raw ingredients and mix in a bowl. You can remove the ribs and seeds from the jalapeno to reduce the heat.

Mix lime juice, olive oil and honey together until combined and pour over the salad.

    I made this salad for my father's birthday gathering. Everyone loved it. I used fresh corn cooked in the microwave, skipped the jalapeno pepper, and added some salt and pepper. - 7/7/13
