Kale & Brown rice risotto

Ingredients
1 sweet onion 1/4 c olive oil3c kale chopped2 c spinach 1/2 c brown rice 3c vegetable stock
Directions
Chop onion and Carmelite in olive oil over low heat for about 30 min.
Add rice and cook about 10 min
Add veggies and broth. Pepper to taste.

Cover and let simmer for 3 hours.
Amazing!
