Breaded Chicken or Pork Dijon

Ingredients
5 Cups Panko Bread Crumbs1 1/2 Cups Grated Parmesan2 Tbsp. Italian Seasoning1 Tbsp. Thyme1 Tsp. Salt1 Tbsp. Black Pepper50 Chicken Breasts or Pork Chops1 1/2 to 2 Cups Dijon MustardOlive Oil to coat pan
Directions
Combine all dry ingredients in a bowl. Brush both sides of chicken or pork with dijon mustard dredge in breadcrumb mixture. Coat baking sheet with olive oil. Bake chicken or pork 10 to 12 minutes on first side. Flip chicken or pork and cook an additional 10 to 12 minutes. Internal temperature should reach 165 degrees for chicken and 145 degrees on pork.
