Vegetarian Couscous

Ingredients
70 grams couscous(espresso cup)1 tbsp olive oiljuice of 1 lemon5 sun dried tomatoes1 tbsp chopped onion40 grams gerkins in vinegar30 grams saltanas
Directions
Place couscous in a heat proof bowl and cover with boling water so the water is about a finger over the top of the couscous. Cover and allow to stand for 10 mins. In the meantime roughly chop the tomatoes,onion,and gerkins. Once all the water has been absorbed by the couscous add the olive oil and lemon juice and fluff the couscous with a fork. Add all the other ingredients.
