Ham and Broccoli Casserole

1 Healthy Choice Ham Skin removed and Diced2 2lb Bags Frozen Broccoli20 Cups COOKED Brown Rice (Approx. 10 cups Dry)2 Cans Healthy Request Mushroom Soup6 Cups Shredded Cheddar Cheese2 Small Diced Sauteed Onions3 Cups Sour Cream4 Cups Bread Crumbs2 Cups Shredded Parmesan2 Tbsp. Black Pepper2 Tbsp. Salt
Combine all ingredients except bread crumbs and parmesan cheese in mixing bowl. Combine well and separate evenly into two greased long shallow hotel pans. Bake for 30 minutes in 350 degree oven.
Mix bread crumbs and parmesan cheese.
Remove casseroles from oven and top each pan with half of bread crumb mixture.
Bake an additional 15 minutes until brown and interal temperature reaches a minimum of 165 degrees.
