Spinach Scramble :)

Ingredients
2 - Large Eggs1 oz - Crumbled Feta Cheese2 C - Fresh Spinach
Directions
Wisk the eggs with a splash of water. Chop the fresh spinach. A large pizza cutting wheel and a cutting mat makes the job fast and easy and gives you nice shreds that mix well. Use a non-stick pan on medium heat. Spritz the pan with olive oil cooking spray. Toss in the crumbled feta and then the spinach shreds. Stir lightly to heat the spinach. Pour on the eggs and quickly stir everything up. Keep stirring till the mixture is lightly set. Add a dash of pepper for taste.
