1 package rice STIX (not noodles) found in asian foods1 lb lean pork cut in small stips1 Cup carrots sliced thin1Cup celery sliced1/4 Cup soy sauce1 - 2 large cartons of chicken brothlemon juice
Pour soy sauce over pork and marinate for 10 minutes. Sautee pork in 1 Tbsp oil until pork is browned. Remove pork from pan and set aside. Add vegetables to pan and sautee until just tender. Soak rice sticks in bowl of water, totally emersed in the water for 10 minutes to soften. Add softened noodles to vegetables and then add pork and toss with tongs. Add chicken broth and sprinkle some more soy sauce for flavor. Add ground black pepper. Cover and cook until most of broth is absorbed into noodles. Squeeze lemon juice ontop of noodles before serving
