Coconut-Grand Marnier panna cotta

-7.5 oz coconut milk-7.5 oz unsweetened vanilla almond milk-1/4 cup granular Splenda-pinch salt-1 3/4 t powdered gelatin-2 T cold water-1 T Grand Marnier-1/2 t vanilla extract
1) Combine coconut milk, almond milk, Splenda, and salt in a small saucepan, and bring to a boil.
2) While that's heating, sprinkle gelatin over the cold water and let it bloom in a large heat-proof container.
3) When the coconut mixture has boiled, pour 1/2 into the container with the gelatin and whisk until well-mixed. Add the remaining liquid into the container with the vanilla extract and Grand Marnier. Stir until combined.
4) Pour into 4 ramekins and refrigerate for 4 hours or more.
Serving Size: makes 4 small ramekins
