Chicken Risotto w/o Cheese

Ingredients
*C&W Yellow and Green Zuccini Squash (half bag), 0.5 cup (remove)Chicken Breast, no skin, 0.5 breast, bone and skin removed (remove)*Brown Rice, medium grain, 0.5 cup (remove)Baby Carrots, raw, 2 medium (remove)Onions, raw, 1 cup, chopped (remove)Garlic, 4 cloves (remove)Olive Oil, 2 tbsp (remove)Chicken Broth, 4 cup (8 fl oz) (remove)
Directions
1. Saute chopped onion, garlic, zucchini in 2-3 tbsp of olive oil.
2. Add 1/2 - 1 cup of brown rice in it and saute well.
3. Add Chicken Broth & bring it to boil.
4. Add salt as per taste
5. Cook till rice is soft or it the consistency is as per need
