Creamy Wild Rice Soup

1/3 cup of wild rice1 c. water1/2 tsp salt************1/2 C. Smart Balance Light Butter3/4 C onion1 C finely diced celery1/2 C diced carrots2 tsp salt1/4 tsp white pepper1/4 C whole wheat flour5 C non-fat Milk
In a saucepan- bring to boil wild rice, water and 1/2 tsp salt. Reduce heat and simmer 45 minutes or until tender.
To prepare soup, melt butter add onions, celery and carrots in a pan. Cover and gently cook for 5 minutes until the vegetables are tender, not over cooked. Stir in salt, pepper and flour. Remove from heat and add milk, stirring until flour is well blended. Return to low and heat. Cook, stirring constantly, until soup thickens. Add the cooked wild rice and simmer a few minutes to blend flavors. Serve hot, garnished with chopped chives.
