Berbere - Ethopian Hot Spice Powder

Cumin seed, 2 tsp*Whole Cloves, 8 cloves*Cardamon seeds - removed from pod, 1 tspBlack Peppercorns 1/2 tsp*fenugreek seeds, 1 tsp*Coriander seeds 1 tsp*Dried Red chilies, 8 small chiliesGinger, ground, 1/2 tspAllspice, 1/4 tsp*ground tumeric, 1/4 tspSalt, 1 tspCinnamon, ground, 1/4 tspPaprika, 3 Tbsp
Toast the cumin seeds, cloves, cardamon, black peppercorns, fenugreek, coriander seeds and chilies in a dry frying pan (cast iron preferably) over medium heat. Shake the pan frequently, until lightly colored.
Remove from heat and leave to cool. Grind the mixture in a spice grinder, with the ginger, allspice, salt, tumeric, cinnamon and paprika until a fine powder forms. Store in an air-tight container, or small jar with lid.
Serving Size: Makes 1/2 cup spice powder - or 8 tablespoons - store in a tight lid jar
