Banana Waffles

Ingredients
1 cup skim milk1 egg, separated1/2 teaspoon vanilla1 tablespoon canola oil1 very ripe banana, mashed1 cup white whole wheat flour1/4 cup oatbran1 tablespoon sugar2 teaspoons baking powder1/4 teaspoon salt1/2 teaspoon cinnamon1/4 teaspoon nutmeg
Directions
In large bowl, whisk together all dry ingredients. Make a well in the center and pour in milk, egg yolk, vanilla, oil and mashed banana. Stir together until just combined. Whip egg white until stiff peaks form. Gently fold whites into batter. Pour a heaping 1/3 cup into hot, greased waffle maker and cook to your preference. Serve with fresh banana slices and maple syrup.
