*Flour, white, 2 cup Granulated Sugar, 1.25 cup Baking Soda, 2 tsp Cinnamon, ground, 2 tsp Salt, .5 tsp Carrots, raw, 2 cup, grated Apricots, dried, .33 cup, halves Raisins, 0.33 cup *Coconut, shredded, .5 cup 1 apple, cored, peeled and grated Apple juice, unsweetened, .33 cup Egg, fresh, 2 large *Canola Oil, .75 cup Vanilla Extract, 2 tsp
mix first 5 ingredients into a large bowl. stir in carrot, raisins, coconut, apricot and apple. In separate bowl beat eggs, oil and vanilla. Stir liquid into dry mixture until batter is just combined. spoon into greased (or silicone) muffin cups, filling to the top.
bake 350F for 20 mins.
