1.5 lbs chicken breast cut into strips1 can (15 oz) lite coconut milk2 Tbs green curry paste1 stalk lemon grass cut into 1-inch lengths1 cup reduced sodium chicken broth2 Tbs lime juice2 cloves minced garlic2 tsp fresh minced ginger0.5 tsp turmeric0.5 cup frozen peas2 Tbs fresh minced cilantro
Whisk Green curry paste into coconut milk in small bowl. Cut chicken into strips. Mix all ingredients in the slow cooker EXCEPT peas and cilantro. Cook on low for 6-8 hours, or on high for 3-4 hours. 15 minutes before end of cooking time, add frozen peas and cilantro. Just before serving, remove lemon grass and serve over Jasmine rice - can be drank as soup as well.
