Chickpeas and Potatoes

1 large onions, thinly sliced1 tsp. olive oil3 garlic cloves1 tablespoon fresh ginger2 tablespoons red wine or 2 tablespoons cooking sherry1 teaspoon cumin1 tablespoon cinnamon1 tablespoon paprika1 cup water (or chickpea cooking liquid)1 tablespoon salt2 cups cubed sweet potatoes1 cups cooked chickpeas4 cups cubed potatoes
1. cook sweet potatoes and potatoes together.
2. while they're cooking, brown onion in oil until golden colored
3. mince garlic and ginger together (I use a blender) and add them to the mixture in the skillet, together with the wine and spices
4. simmer for 2 minutes.
5. when the potatoes are parboiled, add them and the chickpeas (together with their cooking liquid) to the spiced mixture, mixing thoroughly.
6. heat through and serve.
