Black Bean and Corn Loaf

2 cups of cooked brown rice2 cups black beans1 cup corn1/2 diced onion3 cloves of garlic2 tbsp of basil2 tsp oregano1/2 tsp cumin powder1/2 tsp salt1/4 black pepper2 eggs, beatenOil or Pam (I used Pam)2 cups tomato sauce (optional)
Preheat oven to 350 F
Mix rice, beans and corn together in large bowl.
Saute onions, and garlic in oil over medium heat until onions are soft. Let cool for 3 minutes and add to bean mixture.
Stir in basil, oregano, cumin, salt, pepper and eggs.
Pour into lightly oiled loaf pan. cover and bake for 30 to 40 minutes or until set. Serve with tomato sauce, if using (nutritional information does not include tomato sauce)
