Chicken pasta with lighter cream sauce

3 Boneless, skinless Chicken Breast, diced3 Carrots, chopped1/2 medium onion, chopped12 oz Any type pasta 1 tbsp Olive Oil3/4 cup Parmesan Cheese, grated3 cloves garlic, minced1/2 cup sour Cream1 can evaporated m 2% (13 oz)1 bunch fresh spinach, chopped1 Tbsp dried basil
Boil pasta according to directions. Drain and keep warm in same pan.
Heat oil in pan over medium heat, add carrots, chicken, onion and garlic. You may need to do this in portions to saute instead of steaming. I did mine in three sets. Remove chicken, etc to plate and keep warm.
Wisk milk and sour cream in same skillet until smooth. Do not boil. Add parmesan and salt and pepper to taste. Add spinach, basil and chicken mixture. Simmer for 5 minutes. Add to pasta and mix.
Serving Size: Makes 8 good size portions (using salad plate) or 10 smaller portions.
