Shrimp and Oriental Rice

1 1/2 cups water1 cup organic chicken broth1 1/3 cups uncooked, long-grain white rice2 tsp corn oil2 tbsp chopped red pepper2 tbsp chopped onion1 large egg, beaten240 grams of cooked, peeled shrimp1/4 tsp sage1/4 tsp nutmeg1 tsp black pepper
Combine water, broth and rice in saucepan. Bring to boil. Cover and simmer for twenty minutes. Let stand.
Meanwhile, heat oil in a skillet. Saute the onion, and peppers. Add the shrimp and cook for a minute or so.
Then add the beaten egg. Whisk the egg as it cooks.
Then, add the rice and seasonings.
This recipe makes four servings, of approx 11/2 cups each.
