Sunday chuck roast

Ingredients
2lb. chuck roast (try to find one without a lot of fat)EVOO drizzle a little on vegetables and meat10 Baby Carrots (more or less on family size)6 Medium red potatoes2 tsp kosher salt1 tbsp freshly ground black pepper1tbsp onion powder1tbsp garlic powder (or throw in some fresh garlic gloves smashed and skins removed)1tsp oregano1c water
Directions
Quarter potatoes. Season meat with 1tsp salt and half of pepper and half of evoo. Place all ingredients in oven roasting pan. Season vegetables with all seasonings and evoo, cover, and cook on 250 for about 3 -4 hours. Remove. ADJUST SEASONINGS TO YOUR DIETARY NEEDS AND LIKES!!!!!
