Meatball Soup

Ingredients

1 lg can whole tomatoes1 yellow bell pepper roasted1 red bell pepper roasted1/2 cup pumpkin puree1 medium onion diced3 cloves of garlic1 tbsp Extra Virgin Olive Oil2 cups low sodium chicken broth2 boneless skinless chicken breast1/4 cup pureed Broccoli1/2 cup pureed sweet potato1/5 cup italin bread crumbs2 cups cooked Rainbow bowtie pasta
Combine in food processor: Canned Tomatoes, Yellow and Red Pepper and pureed Pumpkin untill smooth, set aside
Saute Onions and Garlic in pot with Oil. Add Tomato puree mixture to onions and garlic once onions are soft. Add chicken broth and Simmer
Combine raw Chicken breast, Broccoli puree, Sweet Potato puree, Bread crumbs in food processor untill well mixed. Form into small meat balls and drop into soup. Cook until meat balls are no longer pink about 45 mins. Add 2 cups cooked Rainbow bowtie pasta.
