1 pd. dried white beans14 ounces turkey kielbasa4 cups low-sodium/fat chicken broth1 14.5 ounce can of diced tomatoes1 large onion6 cloves garlic1 tsp. dried rosemary5 ounces baby spinach1 c. chopped celery
In a slow cooker, combine beans, kielbasa (halved lengthwise and sliced 1/2 inch thick), broth, tomatoes (and their juices), onion, celery, garlic, rosemary, and 1 cup water. Cover and cook on low for 7 hrs. or high for 5-6 hours. Just before serving, stir in spinach. Serve with country bread, if desired.
