Mocha Fudge Pudding

Ingredients
~1/2 Package silken extra-firm light tofu (about 6 ounces)~2 Cups skim milk~1 Tbsp instant coffee granules~1 1.4 ounce package sugar-free, fat-free instant chocolate pudding mix
Directions
1. Place tofu, milk, and coffee in a blender and blend til smooth, about 30 seconds. Add the pudding mix and blend about 20 seconds more.
2. Transfer the mixture to 4 1-cup serving dishes, and refrigerate for at least 2 hours before serving.

This recipe is great topped with a little whipped topping and strawberries.
