Low cal Sweet n Sour Chicken

1 c. low sodium chicken broth1/4 c. cider vinegar1.5 T. low sodium soy sauce2 T. splenda brown sugar blend2 T. extra virgin olive oil1 lb. boneless/skinless chicken breast, diced1 med red bell pepper, chopped2 med carrots, chopped1.5 c. broccoli, chopped1/2 med. onion, chopped2 cloves garlic, minced1-8 oz. can pineapple chucks, drained4 tsp. corn starch4 T. cold water
Heat oil in wok or large skillet on med.
In a bowl, combine first 4 ingredients, set aside.
Turn up heat to med/high. Add chicken. Stir fry until no longer pink. Add veggies, stir fry 5-10 mins depending on how tender you like them. Add garlic & pineapple for 2 mins, then add chicken broth mixture.
Mix together corn startch & water, add to skillet. Stir until sauce thickens.
Serve over rice (not included in calories)
