Grandma's Quick Cherry Cheesecake

Crust:1 cup Graham Cracker Crumbs1/3 cup salted butter 4 packets of vanilla flavoured or plain stevia Filling:1 250g package low fat cream cheese (be sure to use the blocks and not the spreadable kind in the plastic container)1 14 oz can Light condensed milk3 tbsp Lemon juice1 tbsp vanilla extractTopping:1 can (~500mL) E.D. Smith Light and Fruity Cherry Pie Filling
- Preheat oven to 350
- Melt butter and pour over stevia and graham cracker crumbs in small bowl. Cut with pastry belnder or fork utnil well blended.
- Press crumb mixture into bottom of 9x13 or smaller pyrex pan
- Bake at 350 until golden brown (~15 minutes)
- While crust is baking, beat cream cheese until smooth. Then beat in condensed milk and vanilla extract. Once thoroughly blended, beat in lemon juice to thicken.
- Allow crust to cool. Once cool to the touch, pour in filling. Top with cherry pie filling. Chill 1 hour or more and serve.
