3 C non-fat beef broth2 Cloves minced garlic1 Tbsp. tomato paste2 C Chopped cabbage1/2 Yellow onion1/2 C Chopped carrots1/2 C Green beans1/2 C Chopped zucchini1/2 Tsp. basil (1/4 C fresh basil)1/4 Tsp. oreganosalt and pepper
*Saute onions, carrots and garlic for 5 minutes.
*Add broth, tomato paste, cabbage, green beans, basil, oregano and salt and pepper to taste.
*Simmer for about 5-10 minutes until all vegetables are tender, then add the zucchini and simmer for another 5 minutes
Serving Size: Makes 6-8, 1 Cup Servings
