Mediterranian Pasta Salad

Ingredients
1 large cucumber, sliced and halved1 large tomato, sliced1/2 cup red onion, sliced thinly and small1 1/2 cup feta cheese2 tbsps parsley1 large yellow bell pepper (or any colour)1/3 cup extra virgin olive oil1/4 cup white vinegar1 clove garlic, crushed4 1/2 cups penne or rotini pastasaltpepper
Directions
Cook pasta in a large pot. Strain and rinse until cooled. Add to a large bowl with chopped/ sliced vegetables. Add parsley. Mix in a small bowl the vinegar, oil, salt, pepper, and garlic and pour over top of salad. Add feta cheese and stir altogether. Let rest for a couple hours before serving.

Serving Size: Makes about 10, 1 cup servings.
