Chicken N' Peppers

Ingredients
3/4 cup low sodium chicken broth1/4 cup soy sauce3 garlic cloves, minced2 tbsp Cornstarch3/4 tsp ground ginger15 ounces boneless skinless chicken (around 2 breasts)1/2 tbsp extra virgin olive oil2 Green Bell Peppers cut into 1 inch pieces1/4 cup water
Directions
In a bowl, combine broth, soy sauce, garlic, cornstarch, and ginger. Mix well. Add chicken, stir to coat. Heat oil in a large skillet over medium high heat. Add chicken and mixture to skillet, cook and stir constantly for seven minutes. Reduce heat to medium. Add peppers and water, cook and stir for 5 to 8 minutes or until the peppers are tender.
