Healthy Pancakes

Ingredients
Low Fat, Heart Smart Bisquick 2 Cups1 Large Egg (Healthy or Organic Preferred)1.25 Cups Soy Milk (Organic Preferred)1 tsp Vanilla Extract[Fat Free Milk or Reduced Fat Milk can be substituted for soy milk.Add all ingredients together and mix until smooth and no lumps.
Directions
Preheat electric skillet to 350 degrees; a regulary frying pan can work as well.
Add all ingredients into a mixing bowl.
Mix until all ingredients are smooth and no lumps.
Pour batter into pan until it makes about a 5 inch round (approximately 1/2 cup batter).
Allow pancake to make a few bubles on top (note: it will not buble as much as regular pancakes)
Flip and allow underside to lightly brown.
Remove and serve with favorite fruit or sugar free syrup.
Makes approximately five, six-inch pancakes.
