1 cup (200g) granulated sugar1 cup (250ml) extra virgin olive oil1 cup (250ml) orange juice, preferably freshly squeezedzest of one orange1 cup (150g) raisins3.5 cups (450g) self-raising flour or plain flour sifted with 3 tsp baking powder
Preheat oven to 180 C (350 F).
Measure sugar, oil and orange juice into a bowl. Stir until sugar dissolves. Add orange zest and raisins. Quickly stir in flour--don't over-mix.
