Fire-Roasted red Pepper Guacamole

Ingredients
1 large roasted red pepper, diced3 ripe avocados1 shallot, finely chopped1 tomato, skinned, seeded and diced2 jalapenos, seeded and diced4-5 tbsp chopped corianderjuice of 1 limecayenne pepperpita's or tortilla chips to serve.
Directions
Cut the avocados in half, remove skin and stones and mash the flesh with a fork. Stir in red pepper, shallots, tomato, jalapeno and coriander.
Add lime juice, salt, cayenne pepper to taste.
