Indian-Style Eggplant

Ingredients
3 tbsp oil1 Eggplant, chopped1 large onion, choppedRed Ripe Tomatoes, 2 large, choppedTofu, extra firm, 1 block, cubedSalt, 1 tsp5 cloves garlicCurry powder, 1 tspGround tumeric, 0.5 tspCumin, 1 tspGround Coriander seed, 1 tspCayenne Pepper, 0.5 tspCinnamon, generous pinchFresh cilantro (optional)Rice or bread to serveOikos Organic Greek Yogurt, Plain, 18 oz
Directions
Fry tofu in oil till golden brown. Add eggplant and onion, fry about 2 minutes till onion starts to collapse. Add tomatos and spices. Add a few ounces of water if needed. Reduce heat, cover and simmer for about 10 minutes. Stir, taste, add more cayenne/garlic/salt if desired.

I usually make this spicy and eat with plain yogurt. It can be served with bread or rice.
