1 roma/medium tomato, sliced or chunked1/2 cup of onion slices1 slice mozzarella (part-skim preferred)1/2 Tbsp. garlic powder1 tsp. oreganodash of salt and pepper
1. Melt butter in your smallest skillet or pan.
2. Slice or chunk tomato in 6-8 pieces and add to the pan.
3. Add onion slices.
4. Top with salt, pepper, garlic, and oregano.
5. Cook 3 or 4 minutes, stirring often, until onions soften slightly and tomatoes begin to look saucy.
6. Top with cheese and allow a minute to melt.
7. Serve by itself as a tasty lunch or as a topper to chicken, beef, or pasta.
