3 Tbsp olive oil1 large onion diced4 garlic cloves mined1 cup butternut squash chopped 4 cups of water3 tsp of "better than bouillon" in the jar3/4 cup of quinoa1 and 1/4 cup of lentils1 can of corncilantro for topping (optional)
Saute chopped onion and butternut squash on medium heat until soft and then add garlic and saute for one minute. Add water and better than bouillon flavoring. Add spices, lentils and quinoa. Bring to a boil and then reduce heat to a simmer and cook for 30 minutes.
When lentils are soft add one can of corn and serve.
Optional: you can add chopped cilantro if you like that flavor
