Ingredients
1 1/2 C. fat-free cottage cheese1/2 C. skim milk2 garlic cloves, minced2 tbsp flour1 tbsp lemon juice1 tsp dried basil1/2 tsp dried mustard1/2 tsp pepper1/4 tsp salt8 oz cooked & drained pasta of choice1 - 2 tomatoes, peeled and diced
Directions
In blender or processor, combine cottage cheese, milk and garlic until smooth. Add flour, lemon juice, basil, mustard, salt and pepper until well blended. Pour into saucepan and heat at medium-low until thickened. Do NOT boil. Serve over pasta - topping with diced tomatoes.

Variations (not calculated): Leave out the dry mustard, and sometimes throw in 3 oz fat free cream cheese and a sprinkle of Parmesan for a more authentic taste. The recipe may not be saucy enough for some, so you can make additional sauce as desired.
