Pineapple Upside Down Cake - But not lo-cal!

1 c pineapple juice3 eggs1/3 c oilPillsbury yellow cake mixcan of pineapple rings (will use 8 of the 10)maraschino cherries4 T butter1 c brown sugar
Mix cake mix as directed, substituting pineapple juice for the water. Melt butter on the stove in large oven proof non-stick frying pan, mix in brown sugar and melt. Place pineapple slices on top of butter / sugar mixture, place a cherry in the center of each ring. Pour mixed batter over top, Bake at 350 degrees for 35 - 40 min. Allow to cool in pan for 5 min, flip onto platter and allow pan to sit on cake for another 5 min then release pan. Can serve warm or at room temp. Tastes even better the day after!
