Hearty Lentil Barley Tomato Soup

Ingredients
2 Celery ribs, thinly sliced1 medium onion, chopped1 garlic clove, minced2 Tbls unsalted butter6 cup chicken or vegetable broth1 can (28 oz) diced tomatoes, undrained3/4 cup dry lentils, rinsed3/4 cup pearl barley1/2 tsp dried oregano1/2 tsp dried rosemary, crushed1/4 tsp pepper1 cup thinly sliced carrots
Directions
In a Dutch oven, saute the celery, onion and garlic in butter until tender. Add broth, tomatoes, lentils, barley, oregano, rosemary, and pepper, bring to a boil. Reduce heat, cover and simmer for 40 minutes or until lentils and barley are almost tender. Add carrots; simmer for 15 minutes or until carrots, lentils and barley are tender. Sprinkle with cheese if desired.

Serving Size: Yield 8 to 10 one cup servings.
