Tapioca Pudding

Ingredients
3/4 cup medium tapioca (sago)5 cups skim milk1/4 tsp salt2 eggs, beaten1/4 cup sugar1/4 cup Splenda sweetener1/2 tsp vanilla
Directions
Combine tapioca, milk, and salt; soak for 30 minutes. Add eggs and sugar; whisk. Bring just to boil over medium-low heat, stirring constantly. Remove from heat. Stir in vanilla. Can be served warm or cold.
