Lentil and Bacon Soup

1 medium onion, chopped2 cloves garlic4 cups chicken broth1 cup lentils1/2 cup shredded carrot4 slices cooked bacon4 asparagus spears chopped1 thai chili1/2 tsp salt1/2 tsp black pepper1/2 tsp cumin
1. Chop onion and garlic and add to medium pot with olive oil, simmer until onion is translucent.
2. break thai chili in half and add to pot with chicken stock. Bring to a boil.
3. Add lentils, reduce heat and let simmer until lentils are tender. (approx 30 mins)
4. remove 3/4 of soup and add to blender or food processor and puree. Return to pot with remaining 1/4 of soup.
5. Add carrot, asparagus, bacon and seasoning, let simmer for 10 mins more.
Serving Size: Makes 4 1.5 cup servings
